Open-faced Neapolitan Churro Bun Ice Cream Sandwich

Ingredients (yields 6-8 shareable servings)

  • 6 Large eggs
  • 1/4 C Cinnamon Sugar
  • 2 C of Half & Half
  • 6 Churro Buns (slacked at room temp)
  • Neapolitan Ice Cream
  • Whipped Cream
  • Powdered Sugar
  • Fresh berries and mint for garnish
  • Pre heat oven and fryer to 360°F
  • Place churros on parchment lined pan and bake for 5-6 minutes
  • Whisk together eggs, cinnamon sugar, and half & half in a mixing bowl until completely incorporated
  • Remove churro buns from oven and allow to cool
  • Soak churros in egg mixture for 60-90 seconds
  • Place soaked churros in fryer and fry 45-60 seconds per side
  • Place churro in bowl and top with scoops of ice cream
  • Dust generously with powdered sugar
  • Garnish with whipped cream, berries, and mint
  • Serve immediately
